Hello WordPress World! It’s been nearly seven months since my last post, and my how time flies when you’re doing a million thing at once. I’ll do a “Cliffnotes” version to keep it short and to the point.
This new post is a follow up to, “Kitchens”, “Regrets?” & “Back to the Office”. Enjoy.
The wine bar were I bar backed, cooked at has closed it’s doors for about two months. Reopened in August 10th under new owner. Now prior to 8/10/2012 the establishment needed to be an existing and a functioning in order the sell the wine bar. I was offered a position to take on the “chef” role. Knowing nothing about recipes for the existing menu, I had to think fast and work hard. The past chefs had left no recipes for me to work with. Why should they and why should they care? I understood what I had to do. Research.
It took me about a month to figure out the base sauces, the meats, dressings, etc as everything was made from scratch. I eventually figured it out and instead of replicating the menu, I went beyond and made it better than before. The customers took notice. Things went well for the relaunch.
For the next few months I struggled with what to put on the specials board. For one, I’ve feared of making soups such as lobster bisque. Again, I figured it out and made it better and it sold a lot faster than I remember it with the old owner. It was time to move forward, full blast and nothing to stop me from succeeding.
The new specials went very well, more than I had expected! I gave customers what they really wanted all along and more, variety. Since then I do look back and ask myself, “How the hell did I pull his off?” It’s commitment, passion for food, never giving up to failure, caring about your customers, and most off all, the staffs that love working here as we are family. After being kicked out of the kitchen by the chef, then repositioned to a bar back, then to a newly chef, do you believe in karma? I sure do. I treat my cooks and staffs with much respect and understanding. Read “Kitchen” and you’ll see what I mean.
